How to Cook Ribeye Steak? 4 Best Ways
Ribeye steak is a premium beef cut from the rib area. In my opinion, it is one of the tastiest cuts of beef because of its rich marbling, tenderness, and deep beefy flavor. Ribeye steak can be bone-in or boneless, but honestly, it just needs a bit of simple seasoning to shince. I’ve experimented with four great ways to cooking ribeye, from sous video and pan to oven and grill, and each one delivers incredible results. How to Cook Ribeye Steak |
Ingredients:
- Ribeye steak (1-2 inches thick)
- Salt
- Freshly ground black pepper
- Garlic
- Herbs such as thyme or rosemary
- Butter
Sous Vide
Equipment:
- Sous vide immersion circulator
- Vacuum sealer
- Vacuum bags or resealable bags
- Cast-iron skillet for searing
- Tongs
Instructions:
Step 1: Preheat the water bath. Fill a large pot with water and attach the sous vide cooker. Set the temperature to your desired doneness. Here is the sous vide ribeye steak temp chart.
- Rare: 120°F (49°C)
- Medium Rare: 130°F (54°C)
- Medium: 140°F (60°C)
- Medium Well: 148°F (65°C)
- Well Done: 156°F (69°C)
Step 2: Season the steak. Generously season the ribeye steak with salt and pepper. You can also put a garlic clove and a sprig of rosemary on the steak for additional flavor.
Step 3: Vacuum seal and bag it. Put the steak in a vacuum-seal bag and use a vacuum sealer to remove air from the bag. If you’re using a resealable bag, try water displacement method to help push air out as much as possible.
Step 4: Cook the steak sous vide. Submerge the sealed steak in the water bath and let it cook for anywhere from 1 to 4 hours, depending on your preferred doneness and thickness of the steak.
Step 5: Pan sear the steak. Once cooked, take the steak out of the bag and dry it off with paper towels. Heat up a cast-iron skillet on high, add some oil or butter, and sear the steak for about a minute on each side until it gets a golden-brown crust.
Step 6: Rest and serve. Let the steak rest for a few minutes, slice it against the grain, and enjoy your meal.
In a Pan
Equipment:
- Heavy-duty skillet
- Cooking thermometer
- Tongs
Instructions:
Step 1: Prepare the steak. If your ribeye steak is refrigerated or frozen, take it out from the refrigerator or freezer and thaw it until it reaches room temperature before cooking. Then, season both sides well with salt and pepper.
Step 2: Heat the pan. Place the heavy skillet over high heat and add a tablespoon of oil, letting it get hot until it shimmers.
Step 3: Pan sear the ribeye. Place the ribeye steak in the pan and let it cook for about 4-5 minutes without moving it. Flip it over and lower the heat the medium. If you like, add butter, garlic, and herbs to the pan at this stage, spooning the melted butter over the steak. Cook for another 3-4 minutes.
Step 4: Check the temperature. Use a meat thermometer to check the internal temperature of the steak. Here is the temperature chart:

In Oven
Equipment:
- Oven-safe skillet
- Wireless meat thermometer
- Tongs
Instructions:
Step 1: Preheat the oven. Set your oven to 450°F (232°C).
Step 2: Season the steak. Pat the ribeye steak dry and season both sides with salt and pepper. Rub some olive oil on the steak for added flavor.
Step 3: Sear the stove. Get an oven-safe skillet hot on the stove for a couple of minutes, then add the steak and sear it for 2-3 minutes on each side until it develops a nice crust.
Step 4: Transfer to oven. After searing, insert a wireless meat thermometer into the steak. Place the skillet into the preheated oven, and cook until the thermometer reads your preferred doneness.
Step 5: Rest before serving. Take the skillet out of the oven and let the steak rest for 5 minutes before you slice and serve it.
On Grill
Equipment:
- Grill (gas or charcoal)
- Meat thermometer
- Tongs
Instructions:
Step 1: Prepare the grill. Preheat your grill to high heat. If you’re using charcoal, make sure the coals are glowing white.
Step 2: Season the steak. Generously sprinkle salt and pepper on both sides of the ribeye to season it well.
Step 3: Oil the grate. Use a paper towel dipped in oil and wipe down the grill grates to keep them clean and prevent sticking.
Step 4: Grill the ribeye steak. Place the ribeye on the grill. For medium-rare, grill for about 5-7 minutes on the first side. Flip it over and grill for another 5-7 minutes.
